Speculaas biscuits with a decorative windmill design

This maple wood speculaas mould presses a stylised windmill design into firm biscuit dough. The recessed image shows a windmill with four sails, a circular hub and a detailed mill body.

A traditional wooden mould for embossed biscuits

A speculaas mould is a wooden board with a recessed design. Unlike a conventional cutter, it does not cut the dough into shape. The dough is pressed into the cavity and takes on the outline and details of the windmill.

Only the released piece of dough is baked. The wooden mould itself must never be placed in an oven.

For speculaas and other firm doughs

The mould is particularly suitable for firm, well-chilled speculaas dough. Other biscuit doughs may also be used when they can be pressed cleanly and do not spread excessively during release or baking.

Very soft, sticky or strongly rising dough may lose the finer details of the design.

How to use the speculaas mould

Make sure that the recessed design is clean and completely dry. Use a fine pastry brush to dust it carefully with flour or a suitable release flour. Pay particular attention to the smaller areas around the sails and mill body.

Press a suitable amount of chilled but workable dough evenly into the design. Fill the smaller details carefully and avoid trapping larger air pockets.

Remove excess dough level with the wooden surface using a suitable kitchen knife or dough tool. Keep the blade flat and take care not to cut into the wood.

Turn the mould over above the prepared baking tray. Release the dough by tapping lightly or carefully easing one edge away. Do not strike the wooden mould forcefully against a hard surface.

The right dough consistency for a clear relief

The dough should be firm and chilled while remaining workable enough to fill the recessed design. Dough that is too warm may stick to the wood and lose its shape. Dough that is too dry or hard may not reach the smaller details.

Return dough to the refrigerator when it becomes too soft. The released biscuits may also be chilled briefly before baking to help them retain their shape.

A windmill with four sails

The recessed image shows a stylised windmill with four crossed sails. A circular hub and lines within the mill body complete the design.

The clarity of these details in the finished biscuit will depend on the recipe, flouring, pressure, dough thickness and behaviour during baking.

For Advent, Christmas and windmill themes

The windmill design is well suited to Advent and Christmas baking but can also be used throughout the year. It works particularly well for country-style tables, Dutch themes, mill festivals and regional gifts.

The embossed biscuits can be served individually or included in a biscuit selection or homemade food gift.

Pale maple wood with natural grain

Maple wood has a pale colour and generally fine, understated grain. This keeps the recessed lines of the windmill clearly visible.

Wood is a natural material. Its colour, grain and minor surface characteristics may therefore vary slightly from one mould to another.

One design per mould

This speculaas mould contains one large continuous design and produces one windmill-shaped biscuit during each use.

The external dimensions of 15 × 9 cm refer to the complete wooden board. The finished biscuit will be smaller because the design is surrounded by a wooden border.

A gift for home bakers

The wooden mould makes a suitable gift for people who enjoy baking, traditional kitchen utensils and handmade Christmas biscuits.

It can be combined with spices, a recipe card, rolling pin or pastry brush to create a small baking gift set.

Personalised on the reverse

A suitable area on the reverse can be personalised with short laser engraving or hot branding on request. Names, dates, small messages and simplified company logos are particularly suitable.

The recessed design and all surfaces that come directly into contact with dough remain free from additional engraving. The position and available design size are checked before personalisation.

For bakeries, mill shops and Christmas promotions

With reverse-side engraving, the mould can also be prepared as a gift for bakeries, mill shops, farm shops, museums, tourism organisations and Christmas events.

Engraving, packaging, quantities and delivery times can be coordinated for larger orders.

Cleaning after use

First remove loose flour and dough residue from the recessed design with a dry, soft brush. Pay particular attention to the narrower areas around the sails and mill body.

If damp cleaning is required, wash the mould briefly by hand with warm water and a mild detergent. Do not soak or place in a dishwasher.

Allow the wood to dry completely

Dry the mould thoroughly after cleaning and allow it to air-dry completely with sufficient ventilation. Do not store it until the deeper areas of the design are also dry.

Do not dry on a radiator, in direct sunlight or beside a fireplace. Rapid and uneven drying may place stress on the wood.

Caring for the wood

Follow the care instructions available for the product. Use only a care oil recommended by the manufacturer and suitable for food contact.

Apply it sparingly to the clean and completely dry mould. Remove excess oil and allow the treatment to dry or cure fully before the next contact with dough.

Check before every use

Regularly inspect the wooden mould for cracks, splinters, heavily roughened areas and firmly attached dough residue. Do not continue using a damaged or insufficiently cleaned mould for food.

Please note: This speculaas mould is a kitchen utensil rather than a toy. Do not use it in an oven, microwave or dishwasher.
