Once you’ve freed even the toughest nut from its hard shell using our nutcrackers, the tasty kernels aren’t just for snacking. They also form the basis of delicious and healthy meals. Here are a few ideas:

1. Walnut Lemon Pasta

Ingredients: 60 g walnuts, 1 untreated lemon, 30 g butter, 10 g sage, 5 tbsp cream, salt & pepper, 50 g Parmesan, 2 tbsp sunflower seeds, 300 g pasta of your choice

Preparation:

  1. While the pasta cooks, crack the walnuts with our nutcracker and chop them finely. Grate the Parmesan as well.
  2. Wash the lemon in hot water, finely grate the zest and set aside. Then squeeze the juice.
  3. Melt the butter in a pan and lightly toast the walnuts and sunflower seeds.
  4. Add the sage, then pour in the cream after about 2 minutes. Stir briefly, add lemon juice and zest, season with salt and pepper.
  5. Add the pasta to the sauce, mix well and serve with grated Parmesan. Enjoy your healthy walnut-based meal.

2. Walnut Honey Cream Cheese

Ingredients: 1 bell pepper, 3 sprigs of basil, 1 clove of garlic, 100 g walnuts, herb salt, 15 g honey, 300 g cream cheese or Greek yogurt (low-fat)

Preparation:

  1. Finely chop the bell pepper, basil and garlic.
  2. Crack the walnuts with the Hofmeister nutcracker and add them whole.
  3. Mix all ingredients into the cream cheese or yogurt, add honey, season with herb salt and serve.

3. Homemade Hazelnut Spread

Ingredients: 350 g hazelnuts, 150 g agave syrup, 1 tbsp cocoa powder, 100 ml milk or water (vegan option)

Preparation:

  1. Preheat the oven to 180°C and crack the hazelnuts with our nutcracker.
  2. Roast the hazelnuts in the oven for 15 minutes.
  3. Blend the roasted nuts and add agave syrup until the desired sweetness is reached. Add cocoa powder until smooth.
  4. Add milk (or water) until the preferred consistency is achieved, then refrigerate. Enjoy your homemade spread.
